In this recipe blog, we will be sharing some delicious salad recipes using our six varieties of greens: rocket leaves, basil, micro lettuce, baby spinach, arugula, and kale.

Rocket Leaves Salad:
Ingredients:
2 cups of Happy Nature’s Rocket Leaves
1/2 cup of cherry tomatoes
1/2 cup of sliced cucumber
1/4 cup of crumbled feta cheese
2 tbsp of lemon juice
1 tbsp of olive oil
Salt and pepper to taste

Directions:

In a large bowl, mix together the rocket leaves, cherry tomatoes, and sliced cucumber.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make a dressing.

Drizzle the dressing over the salad and toss to coat.

Top with crumbled feta cheese and serve.

Basil Salad:
Ingredients:

2 cups of Happy Nature’s Basil
1/2 cup of sliced strawberries
1/4 cup of sliced almonds
2 tbsp of balsamic vinegar
1 tbsp of honey
Salt and pepper to taste

Directions:

In a large bowl, mix together the basil, sliced strawberries, and sliced almonds.

In a small bowl, whisk together the balsamic vinegar, honey, salt, and pepper to make a dressing.

Drizzle the dressing over the salad and toss to coat.

Serve immediately.

Micro Lettuce Salad:
Ingredients:

2 cups of Happy Nature’s Micro Lettuce
1/2 cup of diced avocado
1/4 cup of crumbled bacon
2 tbsp of ranch dressing
Salt and pepper to taste

Directions:

In a large bowl, mix together the micro lettuce, diced avocado, and crumbled bacon.

Drizzle the ranch dressing over the salad and toss to coat.

Season with salt and pepper to taste.

Serve immediately.

Baby Spinach Salad:
Ingredients:

2 cups of Happy Nature’s Baby Spinach
1/2 cup of sliced strawberries
1/4 cup of crumbled goat cheese
2 tbsp of raspberry vinaigrette

In a large bowl, mix together the baby spinach, sliced strawberries, and crumbled goat cheese.

Arugula Salad:
